460 – Caramel Flan / فلان كراميل
For the flan:
- 5 large eggs
- The zest of 1 orange
- 1 vanilla bean (or vanilla extract / sugar vanilla)
- A pinch of salt
- 850 ml (3 1/2 cups) of milk
- 1 can sweetened condensed milk (14 oz / 395 grams)
- 200 grams (1 cup) of granulated white sugar
- Boiling water for baking the flan
Step 1: Prepare the flan
1- Break the eggs into a blender.
2- Add the orange zest.
3- Scrape the vanilla bean and add the seeds to the eegs.
4- Add the salt, the sweetened condensed milk, and blend.
5- Pour UHT milk in large bowl, add to it eggs and sweetened condensed milk mixture and mix.
Step 2: Prepare the caramel
1- Before preparing the caramel, preheat your oven to 180 ° C / 350 ° F and boil water.
2- Place the sugar in a frying pan over medium heat. Add the sugar and do not touch it. It will melt by itself until it becomes liquid. Be careful that the color of the caramel is not too dark otherwise your caramel will be burnt.
3- Pour the caramel into a mold and distribute it evenly to cover the entire bottom of the mold.
Step 3: Bake the flan
1- Using a spoon, remove the foam that formed on the surface of the flan when you mixed it. Mix the flan one last time with the spoon and then pour it in the mold over the caramel.
2- Place the mold containing the flan in a larger baking pan and place it in the hot oven.
3- Pour boiling water into the large baking pan up to half the height of the mold containing the flan. If you pour the water before placing the mold in the oven, it will be very difficult to move it.
4- Cook the flan for about 1 hour. Once cooked, the flan will have a golden surface, it will still be jiggly in the center, but if you insert a knife, it will come out clean.
5- Remove the flan from the hot water and let it sit at room temperature.
6- Place the flan in the refrigerator for at least 4 hours so it sets.
7- When serving, insert a fine knife in the edges of the mold and separate the flan from the mold sides. Then place a plate on top of the pan and flip.
8- Carefully remove the mold et voila!!!
